Fish Tacos

This is my version of fish tacos.  For appetizers, use mini corn tortillas to serve; for a meal, use standard sized.


white fish, approximately 1 1/2 pounds

2-3 tablespoons Melt Organic butter, melted

1/4-1/2 teaspoon cumin

1/8-1/4 teaspoon garlic powder

pinch hot and smokey or your favorite smokey and spicy spice mix

3 tablespoons mayonnaise

teaspoon lime juice

1 1/2 cups coleslaw mix

salt and pepper, to taste


Preheat oven to 450°F.  Slice fish into bite-sized pieces; combine Melt Organic butter and spices and toss with fish pieces.  In oven safe pan, place fish.  Cook for 4-6 minutes or until fish is cooked through.  While fish is cooking, combine mayo and lime juice; add to coleslaw mix and toss to combine.  Salt and pepper, to taste.  Once fish has cooked through, layer in corn tortillas with coleslaw mix.
