The restaurant I referenced in my last post also has a chicken version; here is my recipe for that.
1 cup margarita mix
2 chicken breasts
salt & pepper, to taste
Poke chicken with a fork; place in large zip bag and add 1 cup of margarita mix along with garlic and onion powders. Marinate 30-60 minutes. Heat a grill, or cast iron grill skillet; add a touch of Melt Organic butter to season pan. Cook each steak 5-7 minutes each side or until cooked through. Serve with black beans, rice, and salsa.
