Margarita Tuna

I had a version of this years ago at a chain restaurant.  To my dismay, they discontinued it and have not brought it back yet.  This is the version I created to satisfy my desire for this dish.  Save the leftover margarita mix for another use.


3 cups water

2 cups sugar

1 1/2 cups lemon juice

3 cups lime juice

2 tuna steaks

garlic powder

onion powder

salt & pepper, to taste

Spanish Rice

Black Beans



In saucepan, combine sugar and water; heat until sugar is dissolved then add lemon and lime juices (margarita mix).  Poke tuna steaks with a fork; place in large zip bag and add 1 cup of margarita mix along with garlic and onion powders.  Marinate 20-30 minutes.  Heat a grill, or cast iron grill skillet; add a touch of Melt Organic butter to season pan.  Cook each steak 3-4 minutes each side or until cooked through.  Serve with black beans, rice, and salsa.
