Beefy Lentil Stew

This was a throw together quick stew I created one evening.  It goes together in no time.


4-5 cups water

1 tablespoon beef bouillon (or vegetable, for a vegetarian/vegan option)

salt & pepper, to taste

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1 teaspoon (beef) bacon drippings (or use Melt or your favorite butter substitute for vegetarian/vegan option)

1 1/2 cup dry lentils

1 1/2 to 2 cups frozen vegetables (I mixed peas, green beans, and sliced carrots)

bacon crumbles



Combine water over medium heat; add bouillon, seasonings, and lentils.  Bring to a boil; reduce heat and simmer until lentils are about done – approximately 5-7 minutes.  Add in bacon drippings, and vegetables and cook until vegetables are tender.  Top with bacon crumbles as a garnish.
