Chicken Nuggets

Chicken nuggets are a favorite of many, young and old.  Not really knowing exactly what is in the nuggets found commercially, I wanted a recipe that would be tasty and easy.  If made ahead and frozen, it will also be a quick and easy meal.


1 teaspoon Italian seasoning

1/4 teaspoon salt

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

dash cayenne

small pinch of poultry seasoning

1/2 teaspoon ground mustard

1/4 teaspoon paprika or smoked paprika (your preference)

1/8 teaspoon cumin

1/2 cup flour

1/4 cup bread crumbs

1/2 cup Melt, melted

2 eggs, well beaten

2 large chicken breasts, cubed into about 1 1/2 inch pieces

1/4 to 1/2 cup coconut oil

1/4 to 1/2 cup olive oil


You’ll need 4 bowls with lids; medium in size.

Combine seasonings; grind to a fine powder in a spice grinder.  Place flour in a bowl, and add 2/3 cup seasoning mix; set aside.  Place bread crumbs in a bowl and add remainder of seasoning mix; set aside.  In a 3rd bowl, melt Melt; set aside.  In a fourth bowl, beat eggs with a fork until well combined.

In a 10-12 inch skillet, over low heat, add coconut and olive oils; stir to combine when coconut oil has fully melted.  While oil is heating, add chicken pieces to bowl with butter, place lid on and gently toss around to coat chicken.  Remove lid; using tongs, remove chicken pieces to bowl with the flour mixture.  Add lid; gently toss to coat chicken.  Using tongs again, carefully remove chicken pieces to eggs; add lid and gently toss to coat chicken.  Remove lid and remove chicken pieces to bread crumb bowl.  Cover and gently toss to coat.  Carefully remove each piece, gently shaking off any excess coating, place each piece in the hot oil.  Once all pieces are removed; any remaining coating ingredients can be tossed out.  Once chicken pieces has cooked 2-3 minutes and the underside is golden brown, gently turn each piece over.  Cook another 2-3 minutes until golden brown and chicken is cooked through.  Remove each piece to a paper-towel lined plate and allow some of the excess oil to drain.


To bake:

Preheat oven to 400°F.  Double all the seasonings; decrease flour to 2/3 cup, and increase bread crumbs to 1/2 cup and eliminate the coconut and olive oils.  Coat as above and place each piece on a baking sheet.  Bake about 15 minutes.  Remove pan and turn each piece over; return to oven and cook another 3-5 minutes or until chicken is cooked through.


These can be frozen.  Cool chicken completed; place in freezer bag or container.  To use:  defrost in the refrigerator.  Preheat oven to 350°F.  Bake for 7-10 minutes or until heated through.
