There are many ways to use a bruschetta, other than just on bread; this is one recipe that I created.
4 chicken breasts, butterflied
Follow Your Heart Provolone Slices, halved
Salt & Pepper, to taste
Preheat oven to 350°F. Sprinkle both sides of butterflied chicken breasts with salt and pepper. Place provolone halves down middle of chicken; starting at the narrow end, roll up chicken. Place in baking dish. Once all pieces have been rolled & are in pan, spoon bruschetta over the chicken and bake in hot oven for about 30-45 minutes or until chicken has cooked through & provolone is bubbly. Serve hot.
Tip: if the chicken unrolls, you can use toothpicks to keep them rolled in place. Just remember to remove before serving.
