Pesto Pasta

If you have any leftover Pesto, this is a great way to use the leftovers.


Leftover Pesto

Pasta of your choice

Vegetables of your choice (optional)

Chopped Chicken (optional)

Melt (optional)


Cook pasta according to package directions; drain.  While the pasta is cooking, chop up any vegetable you wish to add to the pasta.  During the last few minutes of the pasta cooking, re-heat the pesto.

If using vegetables:  In a skillet, add melt and vegetables; cook to tender-crisp.  Drain pasta (some water is okay); add to skillet along with chicken if you are using, and toss; add warmed pesto and stir to combine.  Serve hot.
