Bok Choy Skillet

I tossed this together when I was wanting Bok choy recently.  It turned out so delicious!


1/2 cube Melt

1 small onion, quartered and thin sliced

2-3 garlic cloves, thin sliced

16 ounces sliced mushrooms (break up any big pieces into bite sized)

1 small to medium head of Bok choy, cleaned and chopped up

pinch of salt

fresh black pepper, to taste

(Optional – add a cup or two of mung bean sprouts)


Heat large skillet over medium heat; melt the Melt.  Add the onion and garlic and cook until slightly cooked; add the mushrooms (and sprouts, if using).  Cook down a few minutes and then add all except of the dark green leaves of the Bok choy.  Cook until all are tender; drain off any excess liquid (except a teaspoon or two), and add the dark green leaves.  Cook until slightly wilted and heated through.  Serve hot.

This could be brightened with a very small splash of lemon juice.
