Who doesn’t love a good country fried steak? Comfort food at it’s best, this warm and savory dish is great for breakfast or dinner. Serve with potatoes and vegetables for dinner or with eggs and hash browns for a breakfast meal.
2 thin sliced beef steaks, well dried with paper towels
2 cups flour
1 1/2 teaspoon salt
1/2 teaspoon pepper
2-3 teaspoons paprika
Dash cayenne pepper
2 eggs, well beaten
1/4-1/2 cup cooking oil or Crisco
Country Gravy (minus the sausage)
Heat oil, about 1/4 inch deep, in heavy skillet over medium heat to shimmering, but not smoking. While oil is heating, place a baking pan in a low oven (250°F) lined with paper towels. Combine flour and all seasonings; pour into a shallow dish or plate. Pour beaten eggs in a separate shallow dish or plate. Take well dried steak, one piece at a time, dip in flour then the egg, and one final dip in the flour. When oil is shimmering, carefully place steak in pan. Cook about 2 minutes or so without moving. Carefully lift a bit of the hot oil from bottom of pan and pour over top of steak. Using tongs, carefully lift up one end to see if golden. Once golden, carefully flip over and cook again until 2nd side is golden. Remove and place in warmed oven to keep warm while cooking the remainder of the steak. Once all the steaks are cooked, pour the oil out. Return pan to stove and make the gravy, scraping up bits from the bottom of the pan. Serve steaks with gravy.
