Sugar Cookies

These cookies are soft and not overly sweet; I took these camping and they were the hit!  I made mine without any icing, however they could be iced.  If using cookie cutters to shape (rather than just a cookie scoop), make sure the dough is well chilled when rolling out and cutting out.  Roll out on powdered sugar.  If the dough warms up, re-chill.


¾ cup Melt

½ cup butter flavored Crisco

1 cup sugar

1 egg

1 teaspoon vanilla extract

1/2 teaspoon almond extract

3 cups flour

2 teaspoons baking powder

1/2 teaspoon salt


Preheat oven to 350°F.  Cream sugar, egg, extracts and Melt until it is light and fluffy.  Combine dry ingredients and add to creamed mixture.  If it becomes too stiff for mixer, knead by hand (use a small amount of Melt on your hands to prevent sticking).  Roll out on powdered sugared surface, and cut out if using cookie cutters.  Bake 6-8 minutes or until golden.  Cool of sheet for about 5 minutes, then remove from pan and finish cooling until cool.  Once cool, use icing if desired.
