Sweet Spiced Roasted Chicken

This recipe was inspired by a jar of Harper’s Harvest’s Strawberry Mojito Jam.  I knew it would be delicious to marinate chicken in; this is the recipe I came up with.


5 tablespoons (about 1/2 jar) of Harper’s Harvest Strawberry Mojito Jam

3 teaspoons Liquid Aminos or Soy Sauce

2 teaspoons apple cider vinegar

1 small or 1/2 large shallots thin sliced

2-3 garlic cloves, thin sliced

1 small Serrano pepper, thin sliced

1/4 cup hot water

4 pieces chicken approximately the same size, about 3-4 ounces


Whisk together all ingredients except chicken; place chicken pieces in plastic bag and pour marinade over.  Mix chicken well with marinade, squeeze out all the air and place in refrigerator for 1 hour.  Smoosh chicken, turn over and return to refrigerator for another hour.  Preheat oven to 350°F.  Remove chicken from marinade, place in baking dish and bake 30 minutes; flip chicken over and return to oven baking another 10 minutes.  Flip one more time and finish baking for 5 minutes additional.  Serve hot.
