I heard it through the grapevine…that these oatmeal raisin cookies are the best! My oatmeal raisin recipe is another recipe, like the peanut butter cookies, which I lost in the computer glitch; I finally was able to recreate this recipe. Chewy, sweet and chunky with oats and raisins, I hope you enjoy this recipe.
¾ cup Melt
½ cup butter flavored shortening
½ cup sugar
1 cup packed dark brown sugar
3 large eggs
1 ½ teaspoon vanilla extract
2 ½ cups flour
2 teaspoons baking soda
1 teaspoon salt
1 ½ teaspoon ground cinnamon
2 cups old-fashioned oats
1 cup golden raisins
Cream butter/shortening with brown sugar; add eggs and extract. Combine flour, baking soda, salt, and cinnamon; add oats and combine with creamed mixture just until combined; add raisins and mix together. Place on ungreased baking sheet, flatten slightly and then bake 8-10 minutes or until golden. Cool on pan 1 minute and then finish cooling on cooking racks.
