Peanut Butter Cookies

Years ago I had a great peanut butter cookie recipe, but in an unfortunate computer glitch, I lost it (among other recipes).  I have searched recipes and worked at recreating it with no success…until now.  This recipe creates a soft and crunch, lightly sweet peanut butter cookie.


1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup crunchy peanut butter
1/4 cup butter flavored shortening
1/4 cup Melt, slightly soft
1 egg
1 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt


Preheat oven to 375°F.  Cream sugars, Melt and shortening; add egg and peanut butter, and cream well.  Combine dry ingredients in a separate bowl and slowly incorporate into sugar mixture until well mixed.  On an ungreased baking sheet, place scoops of dough, about 3 to a row with 4 rows (12 dough balls per pan).  Using a sugared fork, press cookies crosswise.  Bake for about 10 minutes until outside edges are lightly browned.  Cool on pan for a few minutes, transfer to wire rack and cool completely.
