These are a great side for a weekend barbecue party. Key tip is to make sure they are thin sliced; thicker slices are more like round french fries. They are quite easy, but do take time to fry up and drain.
3-4 potatoes, scrubbed clean & thin sliced
quart of oil
ranch seasoning (use the seasoning from my Ranch Dressing recipe; grind into a fine powder in a spice grinder & put in clean & dry salt shaker)
Place potatoes in microwave safe bowl; toss with a bit of oil (1-2 tablespoons) until potatoes are coated. Cook about 2-4 minutes, until slightly cooked (don’t overcook). While they are cooking, heat oil to about 300°F. Carefully place a few potato slices in the hot oil & cook until brown & crispy. Remove and drain on brown paper lined baking sheet and immediately sprinkle with salt or ranch seasoning and allow to cool. Repeat with remaining potatoes until all are crispy. Serve immediately.
