Pasta Salad

I created this recently for a potluck.  Pasta salad is a versatile recipe – with the base of pasta, one can create a unique salad with a dressing and other ingredients.  Part of my salad was created when I was walking through the grocery store and was saying to myself, “oh, that sounds good”.   This is my version of pasta salad.  Half the recipe, if not serving a potluck crowd!

2 boxes tri-colored spiral pasta, cooked according to package a cooled to room temperature.

2 containers of grape tomatoes – tomatoes halved

1 yellow pepper, seeded & diced

1 orange pepper, seeded & diced

1 can kidney beans, rinsed & well drained

1 small bunch asparagus, rinsed & sliced in about 1/2 inch pieces

Your favorite non-dairy cheese, cubed (Follow Your Heart’s Mozarella or Provolone or Chao’s Creamy would be my go-to choices)

1 bottle of your favorite vinegar & oil salad dressing.

 

Combine all ingredients & mix well.  Refrigerate prior to serving.
