Poached Asparagus

This delicious side was created when I had an overabundance of asparagus; though quick and simple, it will stand out in a crowd.

 

2 bunches asparagus, rinsed & stalks trimmed

1/2 to 1 cup stock (I used chicken)

3-4 tablespoons Melt

Salt & pepper to taste

lemon juice

 

In a hot skillet over medium heat, place prepared asparagus; pour stock over & place Melt on top; cover and let simmer about 10 minutes.  Uncover, drizzle lemon juice over (approximately 1/2 to 1 teaspoons), cover & cook another 5-10 minutes until asparagus is tender; remove asparagus from liquid & drain well before serving.
