Beef Jerky

This is a great recipe for a quick and portable snack!  Although an easy recipe, it does take time.

2 pounds thinly sliced beef, cut into strips

1/4 cup liquid aminos (or soy sauce)

1/4 cup Worcestershire sauce

2 tablespoons liquid smoke*

2 tablespoons brown sugar

3 tablespoons hot & smokey or other seasoning blend, finely ground

Combine all ingredients except beef in a bowl; place sliced beef in a zip storage bag; pour marinade over and zip closed.  Mush bag around, making sure the marinade touches all the beef.  Place in refrigerator 8 hours or overnight.  Preheat oven to 170°F.  Lay out strips of marinated beef on a rimmed baking tray, taking care not to touch the other pieces.  Place tray(s) in oven, propping open door with a wooden spoon (for air circulation).  Dry 3 hours; turn over & finish drying another 3 hours.  When done, remove from trays to cool.  Store in sealed container.

*Liquid smoke can be found in the grocery store in the aisle with the barbecue sauces.
