I hope you had a great Thanksgiving celebration (if you celebrate). I had an excellent day.
I thought I’d share my menu (after the recipe I planned for this weekend didn’t turn out…it was a complete fail!). I did a semi-traditional menu – I had turkey, stuffing, cranberries, potatoes, rolls, etc. Not every item was in the traditional roast turkey, mashed potatoes, cranberry sauce, etc form. Here’s what I had:
Bacon-Wrapped Asparagus (wrap stalks in bacon & fry until bacon is crispy & asparagus is tender)
Rosemary Dinner Rolls (I used almond milk)
Shaved Brussels Sprouts Salad with Apples, Hazelnuts & Brown Butter Dressing (Since I am able to have some dairy now, I actually did this recipe with butter; not sure how it would turn out with using one of the DF butters – I’ll have to try it soon!)
Green Beans with Almonds & Bacon (I added bacon; also, I didn’t boil my beans…I steamed them, then added to the bacon pan with a little butter & finished off.)
Pomegranate and Cranberry Bruschetta (use Tofutti Cream Cheese; also, I would drizzle some high quality olive oil over finished bruschetta before serving)
Asiago Potato Stacks (I used Asiago, but to make it DF, I would use a non-dairy butter [such as Earth Balance] & Follow Your Heart’s Provolone cheese).
I also had a cheese board which included Cranberry Pear Almond Chutney. Absolutely amazing; my mom has told me that all my chutney can only be shared with her…it was a huge hit. With a small amount of fresh goat’s cheese on multi-grained crackers it was so incredible! (if you’re able to have goat’s cheese or try any creamy non-dairy cheese)
