If you’ve been following my page for any time, you’ll know Thanksgiving (USA) is my favorite holiday & is coming up shortly. This recipe is one I created to celebrate this year. I’m thrilled to share with you.
2 turkey breasts, butterflied & pounded thin (about 1/4″)
Stuffing/Dressing (I modified by excluding the gizzard/heart & adding 11 chopped sausage links & 4 ounces mushrooms, chopped up).
Add 1/8 to 1/4 cup stuffing to the butterflied turkey breast, carefully roll up stuffing inside breast. Create a lattice form with the bacon & roll the stuffed breast in the bacon.
Place in roasting pan and bake at 350°F for 30 to 45 minutes or until a meat thermometer reads 170°F.
Remove from oven & let rest 15 minutes. Carefully slice & serve.
