Lentils with Sausage & Spinach

In the three months I’ve been missing in action, I’ve had some major changes – two different jobs.  The first one wasn’t a good fit, but where I landed after is amazing.  I’ve also been downsizing – a major job.  It has been very time-consuming.  I am finally at the end & looking forward to getting my place put back together – organized!  I’ve not cooking much, mostly relying on restaurant & frozen food to get by since things were so crazy.  I’m looking forward to get back to the kitchen to create new recipes for the blog & to eat healthier.  This recipe was a quick-lunch I fixed for this week. I hope you enjoy.


1 cup lentils

water, to cover

1 tbsp beef bouillon

9 sausage links, chopped up

handful of fresh spinach

Spices, to taste & your preference


Place lentils & water in saucepan & bring to a boil; boil 5-10 minutes until tender.  Stir in preferred spices & then spinach and wilt spinach; once spinach has wilted; add sausage pieces & heat through.

This made about 3 1/2 to 4 cups of lentils.
